Recipe: Palm Beach Cheese Puffs

We have been making Palm Beach Cheese Puffs for years.  In a world of wonton cones with tuna

tartar, these puffs are a real throwback to simpler times. Originally adapted from an old James Beard cookbook.


Palm Beach Cheese Puffs

Makes 2 dozen


Ingredients:

  • 1 loaf organic white sandwich bread

  • 1/2 stick butter, melted

  • 1/4 tsp. garlic powder

  • 3/4 cup organic mayonnaise

  • 1/2 cup Parmesan cheese, grated fine

  • 1 Tbsp. sweet onion, minced


Instructions:

  1. Preheat oven to 375 degrees.

  2. With 1 1/2" round cookie cutter, cut rounds out of slices of bread (approx. 2 rounds per slice).

  3. Add garlic powder to melted butter.

  4. Place bread rounds on baking sheet and brush with butter.

  5. Bake in oven for 15 minutes until golden. Cool on rack.

  6. Mix mayonnaise, cheese, and onion in small bowl.

  7. When bread rounds are cool, place heaping spoonful of mayonnaise mixture on each round.

  8. ***At this point you could freeze the cheese puffs on a sheet pan and bake at another time.***

  9. Bake at 375 for 15 minutes until brown and bubbly.

  10. Serve warm with cocktails.


*These are also perfect with tomato soup!
